Enjoyed a lovely dinner with a new friend of my wife and I, Dale, who is working with my wife to put together a local vegetarian society. We brought cornbread stuffing and wild rice, while Dale produced a fantastic batch of seitan (http://en.wikipedia.org/wiki/Wheat_gluten_(food)), a meat substitute made from wheat gluten, pronounced Say-tahn. Truly excellent. This particular batch was in loaf form, but it can be shaped in many other ways. Enjoying some for lunch now, and had to commend it in ink. Recommend it to anyone looking for a healthier meat alternate.
